Roast Beef with Pepperoncini {Slow Cooker}

Description

Delicious and tender roast beef with pepperoncini


Ingredients

Scale
  • Rump Roast – about 3 lbs.
  • 2 cups of chicken broth
  • 3 Tbsp. of Italian Seasoning
  • 1 (16 oz.)Jar of Pepperoncini

Instructions

  1. Place the roast in the slow cooker
  2. Pour enough chicken broth to cover halfway up the roast
  3. Pour out half of the jar of pepperoncini juice
  4. Sprinkle the Italian seasoning over the roast and broth
  5. Add about half of the pepperoncini to the broth
  6. Set the crock pot to high, and leave for about 5 hours, or until tender
  7. Test with a fork to see if the roast easily pulls apart – if it’s not quite pulling apart, reach down into the slow cooker with a fork and knife, and cut into small pieces so the juices can soak into the meat (this will also help cook the meat a little faster).
  8. If it pulls apart with a fork, then start pulling it apart into smaller chunks to allow the juices to soak in
  9. Let it cook for about an hour longer allowing the roast to saturate with the juices and herbs
  10. It should be pretty tender by now, pull it apart again with a fork leaving tender strips of meat in the juices
  11. Keep the crock pot on warm
  12. Serve with delicious bakery rolls, more Pepperoncini, and juice from the crock pot

Notes

Adjustments:

I know I gave an exact on measurement, but honestly, I’ve never used measurements for this recipe. I always pour enough broth and pepperoncini juice to cover the roast and then sprinkle the Italian seasoning to cover the surface of both the roast and the broth. That’s it.

Make-Ahead and Storage:

Can I make this recipe ahead of time?

Yes! This roast beef can easily be made a couple of days in advance

Reheat refrigerated Peppernoncini Roast beef in a large saucepan with the lid on

Can I Freeze Roast with Pepperoncini?

Yes! This recipe makes a great freezer meal. Simply place cooled off meat in its’ juices in a freezer bag and freeze for up to 2 months
