Taco Chili

Ingredients
  

  • 1 lb. of lean ground beef like ground sirloin
  • 1 sweet onion like Vidalia
  • 1 28 oz. can of diced tomatoes
  • 1 28 oz. can of crushed tomatoes
  • 1 15 oz. can of black beans - rinsed
  • 1 15 oz. can of sweet corn - drained
  • 1 8 oz. can of taco sauce
  • 1 4 0z. can of mild green chiles (or hot if preferred)
  • 1 packet 2 Tbsp. taco seasoning

Topping Suggestions

  • sliced green onions
  • tortilla strips or corn chips
  • sour cream
  • shredded cheese
  • diced tomatoes
  • sliced black olives

Instructions
 

  • In a large soup pot, add the beef and onions
  • Cook over medium-high heat until the beef is cooked and the onions are translucent
  • Drain - if necessary
  • Add beans, corn, diced and crushed tomatoes, taco seasoning, green chilies, and taco sauce
  • Bring the pot to a boil, reduce the heat
  • Simmer for about 20 minutes
  • Serve in bowls with toppings
