Equipment

Ingredients
  

  • 20 oz. pineapple chunks or tidbits drained - reserve the juice
  • 2 cups miniature marshmallows
  • ½ cup sugar
  • 1 tbsp flour
  • 1 large egg well beaten
  • 1 & ½ tsp white vinegar
  • 12 oz cool whip
  • 2 cups apples diced - unpeeled
  • 1 & ½ cups salted peanuts

Instructions
 

  • Drain the juice from the pineapple, but reserve the juice for later
  • In a medium bowl, mix the pineapple chunks and mini marshmallows
  • Cover the marshmallows and pineapple and refrigerate overnight
  • Pour the juice into a large saucepan. Mix in the sugar, beaten egg, flour, and vinegar.
  • Turn the burner on to medium heat and constantly stir the mixture watching for it to thicken up and starts to look like pudding
  • Cover that and place it in the refrigerator overnight
  • The next day, stir the pudding mixture and fold in the cool whip
  • In a large bowl, combine the cool whip and pudding with the marshmallows and pineapples.
  • Add the apples, and peanuts
