delicious and tender apple cider donut bites for a fall treat
Ingredients
- 1 cup of apple cider
- 1&1/2 cup of all-purpose flour
- 1&1/2 tsp. of baking powder
- 1&1/2 tsp. of allspice
- 1/2 tsp. of ground cloves
- 1/4 tsp. of salt
- 1/4 cup of sour cream – full fat
- 2 Tbsp. of buttermilk
- 1/2 cup of brown sugar
- 1 large egg
- 1 tsp. vanilla extract
- 3 Tbsp. unsalted butter – melted and cooled slightly
cinnamon sugar coating
- 6 Tbsp. of unsalted butter melted
- 3/4 cups of granulated sugar
- 2 tsp. ground cinnamon
Instructions
- preheat the oven to 350 degrees
- butter (24-count) mini muffin tins – using a paper towel, dip it into softened butter and use it to coat tin cavities
- cook down the apple cider to half of the liquid – it will get a little bit thicker and will most likely have some spices that have separated at the bottom
- let apple cider cool down
- in a large mixing bowl, mix the flour, baking powder, spices, and salt
- in a separate bowl, mix the cooled apple cider, sour cream, buttermilk, brown sugar, egg, and the butter which has been melted and slightly cooled
- add the dry ingredients to the wet ingredients and mix until combined
- ladle batter into a zip-tight bag and snip one corner
- pipe the batter into 24 mini muffin tin cavities
- bake for 12-15 minutes
- cool slightly
- using a fork to turn mini muffins, dip them into a bowl of melted butter
- use a separate bowl and fork to coat in a bowl of cinnamon sugar

Apple Cider donut bites can be left covered at room temperature for a few days. They will stay fresh and delicious. However, the best time to eat them is the day of making them.

Are these Donut Bites completely round?
No. They are baked in a mini muffin tin, so they will be muffin shaped with a round top
Can I Change these Donut Bites into Actual Donut Shapes?
Yes! Just use a donut baking pan. You won’t get as many donuts because the donut shape will take a bit more batter. Spoon batter into the donut molds until they are about 2/3 full.

- fill muffin tin cavities about 2/3 full
- while donut bites are still warm, and coat them in butter and cinnamon sugar
