Ingredients
- 1 lb. of lean ground beef like ground sirloin
- 1 sweet onion like Vidalia
- 1 (28 oz.) can of diced tomatoes
- 1 (28 oz.) can of crushed tomatoes
- 1 (15 oz.) can of black beans – rinsed
- 1 (15 oz.) can of sweet corn – drained
- 1 (8 oz.) can of taco sauce
- 1 (4 0z.) can of mild green chiles (or hot if preferred)
- 1 packet (2 Tbsp.) taco seasoning

- tortilla strips or corn chips

- diced tomatoes
- sliced black olives
Instructions
- In a large soup pot, add the beef and onions
- Cook over medium-high heat until the beef is cooked and the onions are translucent
- Drain – if necessary
- Add beans, corn, diced and crushed tomatoes, taco seasoning, green chilies, and taco sauce
- Bring the pot to a boil, reduce the heat
- Simmer for about 20 minutes
- Serve in bowls with toppings
