Sautéed Fresh Corn with Green Pepper

Ingredients

  • 2 Tbsp. of unsalted butter
  • 1 or 2 ears of leftover corn on the cob – cut off of the cob
  • 1 Green Bell Pepper – chopped
  • Salt to taste

Instructions

  • Using a large skillet, over med-high heat – melt butter
  • Cook green pepper for a few minutes – stirring occasionally
  • Add corn, and continue to saute the two vegetables – I like to let the corn brown a little on the edges
  • Add salt to your taste

Sauteed corn can easily last up to 5 days in the refrigerator

Storing: Store this skillet cooked corn in an airtight container in the fridge

Reheating: Reheat sauteed corn in the microwave or on the skillet until warmed through

How do you slice Fresh Corn off of the Cob?

Stand the corn up on your prepared work surface. Use a short knife to cut the corn from the top to the bottom. Turn the corn and do it again until all of the kernels have come off of the cob.
